The crisp autumn air makes me long for warm soup and cozy sweaters...is anyone else with me? I shared this recipe in my Instagram stories and I had an overwhelming amount of people who wanted the recipe, so here you go! It’s an improvised, mostly-scratch update of my classic vegetable soup that I whip up when it starts to get colder. PLUS! It’s a one-pot recipe. I throw everything into the Instant Pot, turn and it on slow cook, and check on it every so often. Within a few hours it’s a delicious (and filling!) soup.
